The cutest addition to your dessert line up! These little cheesecake bites are deceptively filling and topped with smashed berry pulp. Featuring our chocolate pea protein, low calorie maple syrup and powdered peanut butter. So good.
Ingredients
- 2 cups of raw cashews (soaked)
- 1/2 cup almond milk
- 2 Tbsp melted coconut oil
- 1/2 cup NZProtein Low-Calorie maple syrup
- 3 Tbsp cacao powder (or you can substitute 1 Tbsp for cocoa powder for a more chocolatey flavour)
- 1/2 tsp vanilla extract
- 1 scoop NZProtein chocolate protein powder (we used Pea, but have a play with others by all means)
- 1 1/2 tsp NZProtein Powdered Peanut Butter
- 1 1/2 tsp chocolate almond butter
- 1 cup blueberries (frozen is fine)
- 1 cup raspberries (frozen is fine)
Directions
- Blend cashews with maple flavoured sauce, coconut oil, peanut butter, almond butter, and almond milk until creamy.
- Add in the cacao and protein powder, blend until thoroughly mixed.
- Pour into small silicone moulds, we used oversized ice cube moulds.
- Place in the freezer for an hour or two to set.
- Blend frozen berries together into a pulp, set aside.
- Once removed from the moulds, allow to thaw a little so they are edible, top with the berries and enjoy!
