Another variation of a protein pancake recipe, this one using almond flour.
Ingredients
- 1 cup almond flour
- 1 scoop vanilla protein powder
- 2 eggs
- 1/2 cup unsweetened almond milk
- 1 tablespoon low cal sauce (maple syrup flavour)
- 1 teaspoon baking powder
- 1/2 teaspoon vanilla extract
- Pinch of salt
- Cooking spray or coconut oil for cooking
Directions
- In a mixing bowl, combine almond flour, protein powder, baking powder, and salt.
- In another bowl, whisk together eggs, almond milk, honey or maple syrup (if using), and vanilla extract until well combined.
- Gradually add the wet ingredients to the dry ingredients, stirring until a smooth batter forms.
- Heat a skillet or griddle over medium heat and lightly coat with cooking spray or coconut oil.
- Pour about 1/4 cup of batter onto the skillet for each pancake.
- Cook for 2-3 minutes, or until bubbles form on the surface of the pancake and the edges start to set.
- Flip the pancakes and cook for an additional 1-2 minutes, or until golden brown and cooked through.
- Serve warm with your favorite toppings such as fresh berries, sliced bananas, nut butter, or a drizzle of maple syrup.
