These cookies are high in protein and have the added bonus of almond flour!
Ingredients
- 1 cup almond flour
- 1/2 cup vanilla protein powder
- 1/4 cup coconut oil, melted
- 1/4 cup honey or maple syrup
- 1 egg
- 1 teaspoon vanilla extract
- 1/2 teaspoon baking soda
- Pinch of salt
- 1/2 cup dark chocolate chips
Directions
- Preheat your oven to 175°C and line a baking sheet with parchment paper.
- In a mixing bowl, combine almond flour, protein powder, baking soda, and salt.
- In another bowl, whisk together melted coconut oil, honey or maple syrup, egg, and vanilla extract until smooth.
- Gradually add the wet ingredients to the dry ingredients, stirring until well combined.
- Fold in the dark chocolate chips until evenly distributed throughout the dough.
- Scoop tablespoon-sized portions of dough onto the prepared baking sheet, spacing them slightly apart.
- Use your hands or a fork to flatten the dough slightly.
- Bake for 10-12 minutes, or until the edges are golden brown.
- Allow the cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely. Enjoy!
