Oat Banana Protein Muffins

Allergen-friendly recipe for muffins with oats, bananas, and pea protein powder. This makes approximately 4 muffins.

Ingredients

  • 3/4c Oats
  • 3/4c Milk of choice (I used coconut milk)
  • 1/4c Coconut oil, melted
  • 1 Banana, mashed
  • 1.5 Scoops NZProtein Pea Isolate (Double Chocolate)
  • 1t Cocoa powder

Optional Yoghurt Drizzle:

  • 3T Greek yoghurt
  • 1/4c Icing sugar
  • 1T Cocoa powder

Directions

  1. In a high speed blender, blend the oats into a flour.
  2. In a medium sized bowl, mash the banana with a fork and add the rest of the ingredients to it.
  3. Mix together until smooth.
  4. Pour the mixture into the muffin tins or baking cups.
  5. Bake for 20 minutes, or until muffins spring back when touched.
  6. Transfer to a rack to cool.

Optional: In a small bowl, mix drizzle ingredients together and pour over the cooled muffins.

Makes 4 muffins.
