Allergen-friendly recipe for muffins with oats, bananas, and pea protein powder. This makes approximately 4 muffins.
Ingredients
- 3/4c Oats
- 3/4c Milk of choice (I used coconut milk)
- 1/4c Coconut oil, melted
- 1 Banana, mashed
- 1.5 Scoops NZProtein Pea Isolate (Double Chocolate)
- 1t Cocoa powder
Optional Yoghurt Drizzle:
- 3T Greek yoghurt
- 1/4c Icing sugar
- 1T Cocoa powder
Directions
- In a high speed blender, blend the oats into a flour.
- In a medium sized bowl, mash the banana with a fork and add the rest of the ingredients to it.
- Mix together until smooth.
- Pour the mixture into the muffin tins or baking cups.
- Bake for 20 minutes, or until muffins spring back when touched.
- Transfer to a rack to cool.
Optional: In a small bowl, mix drizzle ingredients together and pour over the cooled muffins.
Makes 4 muffins.
