This banana bread is moist, flavourful, and gluten-free thanks to the use of green banana flour. It's a great way to enjoy a classic treat with a healthier twist!
Ingredients
- 3 ripe bananas, mashed
- 1/2 cup green banana flour
- 1/2 cup almond flour
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1/2 teaspoon ground cinnamon (optional)
- 2 large eggs
- 1/4 cup honey or maple flavoured low-cal sauce
- 1/4 cup melted coconut oil or butter
- 1 teaspoon vanilla extract
- Optional add-ins: chopped nuts, chocolate chips, dried fruit
Directions
- Preheat your oven to 175°C. Grease or line a loaf pan with parchment paper.
- In a large bowl, combine the mashed bananas, melted coconut oil or butter, honey or maple sauce, eggs, and vanilla extract. Mix well until smooth.
- In another bowl, whisk together the green banana flour, almond flour, baking powder, baking soda, salt, and cinnamon (if using).
- Gradually add the dry ingredients to the wet ingredients, stirring until just combined. Be careful not to overmix.
- If desired, fold in any optional add-ins like chopped nuts, chocolate chips, or dried fruit.
- Pour the batter into the prepared loaf pan and smooth the top with a spatula.
- Bake for 45-55 minutes, or until a toothpick inserted into the centre comes out clean or with a few moist crumbs.
- Remove from the oven and allow the banana bread to cool in the pan for 10 minutes. Then, transfer to a wire rack to cool completely before slicing.
- Slice and serve the banana bread plain, or with a spread of butter or nut butter.
