These protein cookies taste deliciously like coconut and are filled with protein. They are a great ‘alternative’ snack to curb a sweet protein but will also help you feel full, to prevent over-snacking.
Ingredients:
● 125g Butter, softened
● ¼ cup Coconut sugar
● 1 Egg
● 1t Apple syrup
● 1 ¼ cup Coconut flour
● 1 Scoop NZP Egg White Protein
● 1 Scoop NZP Vanilla Pea Protein
● ¼ t Salt
● 1t Baking soda
● ½ t Vanilla essence
● ½ cup Dark chocolate chips
Directions
● Preheat oven to 180 degrees C
● In a mixing bowl, beat together softened butter and coconut sugar until fluffy
● Beat in egg, apple syrup and vanilla essence until well combined
● Add protein powder, coconut flour, salt and baking soda and mix until combined
● Fold in dark chocolate chips
● Roll into balls and place on a lined baking tray
● Bake for 12 minutes, or until just golden brown
● Allow to cool before transferring to a cooling rack
