Baked Feta Fettuccine

A quick and delightful recipe for edamame fettuccine that'll leave the whole family wanting more.

Ingredients

  • NZProtein Edamame Fettuccine
  • 1 Block feta
  • Cherry tomatoes
  • Avocado Oil
  • Fresh basil leaves - shredded to season
  • Lemon juice - half a lemon
  • 1/4 cup water
  • 1/4 cup pasta water
  • Salt and pepper to season

Directions

  1. In an oven proof baking dish drizzle with Avocado oil and place feta in the centre.
  2. Cut cherry tomatoes in half and place on the dish around feta.
  3. Finely slice basil leaves and sprinkle over top of the tomatoes.
  4. Season with salt and pepper and add 1/4 cup water to keep the dish moist.
  5. Place in oven at 180 degrees for 10 mins.
  6. In a pot prepare the pasta.
  7. Toss tomatoes (don’t touch the feta) and put back in the oven for another 5 mins.
  8. Drain pasta, keeping 1/4 cup pasta water, set both aside.
  9. Mix tomatoes and feta together in the baking dish to make sauce.
  10. Add fettuccine and pasta water and mix thoroughly.
  11. Drizzle with lemon juice. Serve and enjoy!
