A quick and delightful recipe for edamame fettuccine that'll leave the whole family wanting more.
Ingredients
- NZProtein Edamame Fettuccine
- 1 Block feta
- Cherry tomatoes
- Avocado Oil
- Fresh basil leaves - shredded to season
- Lemon juice - half a lemon
- 1/4 cup water
- 1/4 cup pasta water
- Salt and pepper to season
Directions
- In an oven proof baking dish drizzle with Avocado oil and place feta in the centre.
- Cut cherry tomatoes in half and place on the dish around feta.
- Finely slice basil leaves and sprinkle over top of the tomatoes.
- Season with salt and pepper and add 1/4 cup water to keep the dish moist.
- Place in oven at 180 degrees for 10 mins.
- In a pot prepare the pasta.
- Toss tomatoes (don’t touch the feta) and put back in the oven for another 5 mins.
- Drain pasta, keeping 1/4 cup pasta water, set both aside.
- Mix tomatoes and feta together in the baking dish to make sauce.
- Add fettuccine and pasta water and mix thoroughly.
- Drizzle with lemon juice. Serve and enjoy!
